organic means ''made from natural products, that are gained without artificial products'' - and includes fats or hair or the like of animals.

''vegan'' products are purely made from plants.

both are healthy, it is rather a question of ethics what you use. as a vegetarian or vegan, who does not eat meat or animal products, you would prefer vegan cosmetics.
as somebody who just wants to avoid petrochemical ingredients, you can as well use organic products
